Question about ethnicity/heritage, i'm confused...?

Okay, french as a language and culture is Parisian. French Canadian is a dialect of Paris french as a language. The obvious difference is geographically but there are probably cultural differences but I can't comment on those as I don't know that part. Not sure about your other questions. Hope this helps a bit.
